Strawberries are a favorite fruit anytime during the year.
They also happen to be one of my favorite fruits.
Spring & Summer have never tasted so sweet...
Strawberry Facts:
Strawberries are the first fruit to ripen in the spring.
Strawberries are a member of the rose family.
Strawberries grow on a vine. The plant has a white flower with a yellow center.
The strawberry is the only fruit with the seeds on the outside of the fruit.
On average, there are 200 seeds in a strawberry.
By weight, strawberries contain more vitamin C than oranges.
Strawberries are naturally high in fiber, vitamin C, folate, potassium, and antioxidants, making them a sweet alternative that advances heart heatlth, reduces the risk of certain types of cancers, and gives a boost to total body wellness.
Strawberries are low in fat and calories having 45 calories per cup.
Over 53% of seven and nine year olds picked strawberries as their favorite fruit.
Strawberries do not ripen after they have been harvested, so choose strawberries that have been picked fully ripened.

Strawberry Delight
INGREDIENTS:
1-1/2 cups heavy cream
1/2 cup confectioner's sugar
1-1/2 tsps. vanilla extract
1/2 tsp. orange extract
4 cups strawberries, trimmed and halved
1/4 cup chocolate fudge topping
8 butter cookies
INSTRUCTIONS:
Combine first 4 ingredients in a bowl and whisk vigorously until slightly thickened. Chill 30 minutes. Divide strawberries in individual serving dishes topped with cream sauce. Drizzle with chocolate topping and serve with cookies.

Strawberry Pizza
INGREDIENTS
* 1 stick butter, (4 ounces)
* 1/4 cup confectioners' sugar
* 1 cup flour
* 8 ounces cream cheese
* 1 can sweetened condensed milk
* 1/3 cup lemon juice
* 1 teaspoon vanilla
* 2 cartons frozen strawberries, in juice
* 4 tablespoons cornstarch
INSTRUCTIONS
Crust: Melt margarine; mix with confectioners' sugar. Add flour; mix well. Pat out on pizza pan. Bake at 350° for about 15 minutes, or until lightly browned.
Filling: Beat cream cheese and condensed milk together.
Add lemon juice and vanilla; pour over cooled crust.
Topping: Combine frozen strawberries and cornstarch in a medium saucepan. Cook, stirring, over medium heat until thickened. Cool and spread over cream cheese filling.
Refrigerate at least 4 hours.

JUDY'S Strawberry Pretzel Salad
This is a picnic favorite!
INGREDIENTS
2 c. coarsely crushed pretzels
3/4 c. melted butter
1 c. plus 3 tbsp. sugar, divided
1 (8 oz.) pkg. cream cheese, softened
1 (8 oz.) container frozen non-dairy whipped topping, thawed
1 (6 oz.) pkg. strawberry flavored gelatin
1 c. boiling water
1/2 c. miniature marshmallows
2 (10 oz.) pkgs. frozen sliced strawberries, thawed
INSTRUCTIONS
Combine crushed pretzels, butter and 3 tablespoons sugar; mix well. Press into a 13x9x2-inch baking dish. Bake in preheated 400 degree oven 8 minutes. Remove from oven and let cool completely.
In a large mixing bowl with an electric mixer, beat cream cheese and remaining sugar until well blended. Fold in whipped topping. Spread over cooled pretzel crust. Refrigerate until chilled.
In a mixing bowl, dissolve gelatin in boiling water. Add marshmallows and stir until melted. Add strawberries with their juice. Let stand 10 minutes. Pour over cream cheese layer. Refrigerate until firm. Cut into squares to serve.
Makes 12 servings.

Fabulous Strawberry Muffins
Firm fresh strawberries work best in this recipe, but when the season is over substitute blueberries, cherries or chopped peaches.
INGREDIENTS
2 1/2 cup flour
1/2 cup sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cup buttermilk
1/3 cup melted butter
2 eggs, slightly beaten
1 teaspoon vanilla
1 pint fresh strawberries, hulled and chopped
Additional sugar for topping
INSTRUCTIONS
1. Pre heat oven to 400°F. Spray muffin tin with nonstick cooking spray or line muffin cups with paper cupcake liners.
2. On a large bowl combine flour, sugar, baking powder, baking soda and salt, stir well until all ingredient are well blended.
3. In another bowl, whisk together the buttermilk, butter, eggs and vanilla. Make a well in the middle of the dry ingredients and pour liquid mixture in and the strawberries.
4. Using a large spoon, gently fold ingredients just until moist do not overmix.
5. Spoon the batter evenly into 12 muffin cups. Sprinkle each muffin with about 1/2 teaspoon sugar, if desired.
6. Bake 20 to 25 minutes.
Makes 12 muffins

All-American Strawberry Shortcake

INGREDIENTS:
3 pt Fresh strawberries
2 ts Orange juice
4 tb Sugar
Grated rind of 1 orange
1/4 c Butter
1/2 c Sour cream
4 tb Sugar; optional
1/4 ts Sugar or honey
2 c Flour
4 tb Baking powder
1/2 ts Salt
1/4 c Solid shortening
2 c Whipping cream
INSTRUCTIONS
WHIPPED CREAM: whip cold cream (with sugar) until soft peaks form.
Combine sliced berries; sugar or honey; and orange juice. Let stand at room temp. for 1 hr.
Sift all dry ingredients together into a med bowl. Add orange rind. Add butter and shortening; and work them into flour-mixture thoroughly.
Lightly mix in sour cream with a fork to form a soft dough.
Roll dough out onto lightly floured board; 3/4 in thick. Cut into 4 circles; about 4 in wide (use a 2-lb coffee can as a cutter.)
Place on ungreased baking sheet. Bake at 400 about 20 mins. or until golden.
While still warm; use fork and split cakes in half. Place each on desset plate. Top with drained berries and second half of cake. Top wtih additional berries. ladel some juice on top. Garnish with whipped cream and a strawberry.

Strawberry and Spinach Salad
This spring salad is teaming with Vitamin A and Vitamin C. The bright green of the spinach and contrasting red of the strawberries is beautiful and the flavors are excellent together.
INGREDIENTS
1 pint fresh strawberries
2 bunches fresh spinach
1/2 cup sugar
1 1/2 tablespoons minced green onion
1/2 teaspoon Worcestershire sauce
1/2 teaspoon paprika
1/2 cup olive oil
1/2 cup balsamic or cider vinegar
2 tablespoons sesame seeds
INSTRUCTIONS
1. Wash strawberries under cool running water. Remove caps and set aside to drain.
2. Wash spinach and remove large tough stems. Tear large leaves into small pieces. Drain.
3. In a medium bowl combine remaining ingredients and whisk together.
4. Slice strawberries into halves or quarters and place in a large bowl. Add dry spinach.
5. Pour dressing over all and toss.
Makes 8 servings.
